A Spanish Christmas Feast at The Culinary Institute of America, December 15, 1979
This menu is for a Christmas feast hosted by the Fellows of the Culinary Institute of America in 1979. Prepared and served by culinary students, the event was a tribute to Spain and its cuisine. Illustrated on the cover are two figures under a bright starburst, presumedly the popular Spanish characters of Don Quixote and Sancho from the classic novel by Miguel de Cervantes. The menu lists the hors d'oeuvres served at the reception and the dinner menu, all with corresponding wines. Dinner includes Christmas soup, baked red snapper, melon ice, holiday turkey, roast suckling pig with red cabbage and roasted potatoes, salad, cheese and fruit, flan, Christmas torte and cookies, and coffee and tea.
From the description of the event: "Tonight, we have the opportunity to see, taste, and experience a synthesis of cultures as expressed in one country's cuisine. Tonight we pay tribute to Spain, with an authentic Christmas Feast. Feliz Navidad!"
